Beetroot is one of my favourite ingredients to cook with; I love its fresh vibrant color and earthy sweet flavor. It is also a rich source of anti-oxidants and phytochemicals which help in maintaining cardiovascular health. It is low in fat content, rich in fibre and an excellent source of folate, Vitamin A, B complex Vitamins and minerals like potassium, iron, magnesium, copper and manganese.
This is a quick yogurt based salad, which is commonly made in many Indian homes as a side dish with their meals.
Some readers suggested that I should add local names of ingredients for their convenience; hence the Hindi names are added in brackets.
1 beetroot (Chukandar);
1tbsp Yogurt (Dahi);
1 green chilly (Hari Mirch), finely chopped;
5-6 curry leaves (Kadhi patta),
½ tbsp roasted and crushed Peanuts (Kooti hui Moongphali);
½ tsp mustard seeds (Rai/Mohri);
½ tsp cumin seeds (Jeera);
Asafoetida (Hing), a pinch;
Salt, to taste;
