Blueberry Oats Muffins

Its holiday season, and I am not much of a baker; but some of my foodie friends have been doing so much Christmas baking and dishing up such beautiful yummies; that I couldn’t stop being inspired. My friend N had shared some dried Blueberries that her mother had brought from the Himalayas; so I baked these using a very simple recipe for Christmas.

1 ½ cup All purpose flour (Maida);

½ cup rolled oats;

1 cup Butter;

1 ¼ cup castor sugar;

3 Eggs;

½ cup Blueberries (dried);

1tsp Baking powder;

Milk to adjust consistency (about ½ cup);

½ tsp Vanilla Extract.

  1. Seive all-purpose flour and baking powder together and keep aside.
  2. Combine the butter and sugar in a bowl and cream together.
  3. Break in 3 eggs into the mixture, add the Vanilla extract and beat well until the mixture becomes light and fluffy.
  4. Now add the flour + baking powder, oats and blueberries to the egg mixture and fold in gently.
  5. Add milk to adjust the mixture to a dropping consistency.
  6. Place paper cups in muffin moulds and spoon in the mixture until the cups are 2/3rd
  7. Place in a preheated oven at 200C for 20 minutes or until a toothpick comes out clean from the muffin.
