Blueberry and Oats Cookies

I wanted to bake some cookies, which could accompany a steaming hot cup of tea on a wet, cold, rainy evening like the last few have been in Pune. So I just stuck to my favorite combination of blueberries and oats and made these… a real quick bake…

1 cup ghee(clarified butter), or regular unsalted butter if you prefer;

½ cup powdered sugar;

½ cup dried blueberries;

1 cup rolled oats;

½ cup all-purpose flour;

½ tsp baking powder.

  1. Cream the ghee and powdered sugar together in a mixing bowl, with a hand blender.
  2. Add the remaining ingredients to the mixing bowl and combine all the ingredients to make the cookie dough. The texture should be slightly crumbly.
  3. Cover with cling film and rest the cookie dough in the refrigerator for 15-20 minutes.
  4. Remove the cookie dough from the refrigerator and divide it into smaller portions. Flatten the cookie dough with greased fingertips and shape them into circles.
  5. Place them on a baking tray lined with baking paper. Place into a pre-heated oven and bake at 200°C for 12-15 minutes.
  6. Cool the cookies on a wire rack and serve with hot tea/coffee or chilled milk.
